Highwood Distillers sits in High River, Alberta, a small town named for the river that runs out of the Rocky Mountains and across the prairie. It was started in 1974 as Sunnyvale, a farmer-led venture working with locally grown wheat, and renamed in the mid-eighties after the river.
Soft Canadian winter wheat has been the base ever since. Twin Valley Farms, just up the road, has supplied the grain for more than fifteen years. Inside the gates, more than seventeen thousand casks are quietly aging. Among them, the autumn-1993 fill that became Centennial 33.
